Elva Norman’s Classic Black Walnut Jiffy Cake

Ingredients

2 cups sugar
2 sticks margarine, softened to room temperature
2 cups all purpose flour, sifted and measured or 2 cups unsifted flour minus 2 tablespoons
¼ teaspoon salt
1 cup Hammons Black Walnuts
1 teaspoon lemon extract
1 teaspoon vanilla extract
5 large eggs or 6 medium eggs


Method

Drop each ingredient into an electric mixer bowl in the order given. Beat at high speed for 5 minutes. Pour into greased and floured 10-inch tube pan and bake at 350ºF for 1 hour 15 minutes.

Note: Do not chop the nuts in advance; the mixer will do it for you.
