Buttermilk-Lime Ice Cream

Ingredients

2 cups (500 ml) buttermilk
⅔ cup (150 ml/150 g) crème fraîche or sour cream
Juice of 1½ limes
2 tsp (10 ml) lemon extract
2 tbsp (30 ml) icing (confectioner's) sugar
1 tsp (5 ml) liquid sweetener
Thin slices of lime
Mint sprigs or chopped lemon grass

Method

Whisk together but­termilk, crème fraîche, lime juice, lemon extract, icing sugar and sweetener.


Place the mixture in an ice cream maker and churn-freeze (or place in a metal or plastic bowl in the freezer for 3 to 4 hours, stirring every hour to keep it smooth). Transfer to a freezer-safe bowl and place in the freezer. Before serving, put two ice cream dishes in the refrigerator.


Scoop the ice cream into the chilled dishes. Garnish with half-moons of lime and a mint sprig and serve.
