Peppers With Tomatoes And Anchovies
This is a Sicilian-style salad full of warm Mediterranean flavours. The salad improves if it is made and dressed an hour or two before serving.
Ingredients
1 red pepper
1 yellow pepper
4 ripe plum tomatoes, sliced
2 canned anchovies, drained and chopped
4 sun-dried tomatoes in oil, drained and sliced
15ml/1 tbsp capers, drained
15ml/1 tbsp pine nuts
1 garlic clove, very finely sliced
FOR THE DRESSING
75ml/5 tbsp extra virgin olive oil
15ml/1 tbsp balsamic vinegar
5ml/1 tsp lemon juice
Chopped fresh mixed herbs
Salt and freshly ground black pepper

Serves: 4
Method
1. Cut the peppers in half and remove the seeds and stalks. Cut into quarters and cook, skin side down, over a hot barbecue or grill until the skin chars. Transfer to a bowl and leave to cool. Peel the peppers and cut into strips.
2. Arrange the peppers and fresh tomatoes on a serving dish. Scatter over the anchovies, sun-dried tomatoes, capers, pine nuts and garlic.
3. To make the dressing, mix together the olive oil, vinegar, lemon juice and chopped fresh herbs and season with plenty of salt and pepper. Pour the dressing over the salad before serving.
