Barbecued Goat's Cheese Pizza

Pizzas cooked on the barbecue have a beautifully crisp and golden base. The combination of goat's cheese and red onion in this recipe makes for a flavoursome main course dish.

Ingredients

150g/5oz packet pizza-base mix
Olive oil, for brushing
150ml/¼ pint/⅔ cup passata
30ml/2 tbsp red pesto
1 small red onion, thinly sliced
8 cherry tomatoes, halved
115g/4oz firm goat's cheese, thinly sliced
Handful shredded fresh basil leaves
Salt and freshly ground black pepper

Method

1. Make up the pizza dough according to the directions on the packet. Roll out the dough on a lightly floured surface to a round of about 25cm/10in diameter.


2. Brush the dough round with olive oil and place, oiled side down, on a medium barbecue. Cook for about 6-8 minutes until firm and golden underneath. Brush the uncooked side with olive oil and turn the pizza over.


3. Mix together the passata and red pesto and quickly spread over the cooked side of the pizza, to within about 1cm/½in of the edge. Arrange the onion, tomatoes and cheese on top and sprinkle with salt and pepper.


4. Cook the pizza for 10 minutes more, until golden brown and crisp. Sprinkle with fresh basil and serve.
