Sweet And Sour Sauce

Ingredients

Makes 1¼ pints (3 cups)

14 oz. can pineapple chunks, undrained
Generous ¼ pint ( ¾ cup) chicken stock or bouillon
1½ tablespoons (2 tablespoons) brown sugar
3 tablespoons (¼ cup) vinegar
2 teaspoons soy sauce
1 teaspoon tomato ketchup (catsup)
1½ tablespoons (2 tablespoons) cornflour (cornstarch)
2 oz. (½ cup) spring onions (scallions), sliced
1 green pepper, cut into 1 inch pieces


Method

Drain the pineapple syrup into a large heat resistant bowl. Set the pineapple chunks aside. Add the stock, sugar, vinegar, soy sauce, ketchup and cornflour and stir well.


Cook on HIGH for about 4 minutes until thickened. Stir frequently. Add the pineapple, onion and green pepper and cook for a further 30 seconds. Serve with shrimps, pork or chicken.
