Baked Spiced Quinces

Ingredients

6 medium (2kg) quinces
1 medium (180g) orange
1 litre (4 cups) boiling water
2 cups (440g) caster sugar
2 vanilla beans, split
4 cardamom pods, crushed
1 cinnamon stick
1 tablespoon honey
½ cup (125ml) orange juice

Method

1. Peel and halve quinces, cut each half into 4 pieces; remove core.


2. Peel 4 thin strips of rind from orange using a vegetable peeler. Cut strips of rind into very thin strips.


3. Combine boiling water and sugar in jug, stir until sugar is dissolved. Place quinces in large shallow ovenproof dish (4.5 litre/18 cup capacity). Add rind, vanilla beans, cardamom and cinnamon. Pour sugar syrup over quinces.


4. Bake quinces, covered, in moderately hot oven about 2 hours or until quinces are changed in colour, tender and liquid is syrupy. Carefully remove quinces to large bowl. Stir honey and juice into syrup mixture in dish; pour over quinces in bowl, cover; refrigerate 3 hours or overnight. Remove cinnamon and vanilla beans.

• Storage: Covered, in refrigerator.
• Freeze: Not suitable.
