Sesame Seed Brittle

Ingredients

1½ cups (330g) sugar
¼ cup (60ml) water
½ cup (125ml) honey
2 cups (300g) sesame seeds


Method

1. Grease 26cm x 32cm Swiss roll pan, cover base with baking paper. Combine sugar, water and honey in medium pan, stir over heat, without boiling, until sugar is dissolved. Brush sugar crystals from side of pan with brush dipped in water.


2. Boil, uncovered, without stirring, until mixture reaches soft ball stage (116°C) on candy thermometer (a teaspoon of mixture will form a soft ball when dropped into a cup of cold water).


3. Allow bubbles to subside, gently stir in seeds. Return mixture to boil, simmer, without stirring, until mixture reaches small crack stage (138°C) on candy thermometer (syrup forms a fine thread when dropped into cold water and can be snapped with the fingers).


4. Allow bubbles to subside, pour mixture into prepared pan. Stand 10 minutes, mark into desired shapes. When cold, break into pieces.

• Storage: In airtight container.
• Freeze: Not suitable.
• Microwave: Not suitable.
