Sprouted Seed Salad
Beansprouts have a high vitamin content, a delicious crunchy texture and a delicate flavour.
Ingredients
2 eating apples
115g/4oz alfalfa sprouts
115/4oz beansprouts
115g/4oz aduki beansprouts
¼ cucumber, sliced
1 bunch watercress, trimmed
1 carton mustard and cress, trimmed
For the dressing
150ml/ ¼ pint/ ¾ cup low-fat natural yoghurt
Juice of ½ lemon
Bunch of chives, snipped
30ml/2 tbsp chopped fresh herbs
Ground black pepper

Serves: 4
Method
Core and slice the apples and mix with the other salad ingredients.
Mix the dressing ingredients in a jug. Drizzle over the salad and toss together just before serving.

Cook’s Tip:- You can sprout the beans at home to ensure that they arc really fresh. Always buy the beans from a health food shop and ask for those that are selected for sprouting.
