Pomelo Salad
A pomelo is a type of citrus fruit, with a sharp but sweet flesh.
Ingredients
For the dressing
3ml/2 tbsp fish sauce
15ml/1 tbsp sugar
30ml/2 tbsp lime juice
For the salad
30ml/2 tbsp vegetable oil
4 shallots, finely sliced
2 garlic cloves, finely sliced
1 large pomelo or pink grapefruit
15ml/1 tbsp roasted peanuts
115g/4oz cooked shelled prawns
115g/4oz fresh cooked crabmeat
10-12 small mint leaves
2 spring onions, finely sliced
2 red chillies, seeded and finely sliced, fresh coriander leaves and
Shredded fresh coconut (optional), to garnish

Method
Whisk together the fish sauce, sugar and lime juice and set aside.
Heat the oil in a small frying pan, add the shallots and garlic and fry until lightly brown. Transfer with a slotted spoon to a plate.
Peel the pomelo and break the flesh into small pieces, taking care to remove all the membranes.
Coarsely grind the peanuts into a large bowl, then add the pomelo, prawns, crabmeat, mint leaves and the fried shallot mixture. Add the dressing and toss well to mix. Arrange on a serving plate and sprinkle with the spring onions, red chillies, coriander leaves and shredded coconut, if using.
